Up until recently, I'd never heard of this term. A rainbow baby is the first healthy child after a miscarriage, infant loss, stillbirth or neonatal death. Naturally, I've been trying to think of soap examples.

As it happens both father and son were rainbow babies with Audrey and Simone having miscarried earlier pregnancies before their respective Toms were born.

Lauren - She miscarried her and Paul's child and the first child she would have had with Scott, and successfully had Scotty. 

Ashley - Aborted her and Victor's child, then had Abby years later during Spermgate. 

B&B:
Brooke - Miscarried child with Ridge then had Rick with Eric. 

Passions:
Gwen - Gave birth to Sarah who was stillborn, then had Jonathan a few years later (who she apparently lost custody over to Ethan and Theresa in the finale)

Rachel -miscarried Russ's child but then gave birth to Jamie by Steve Frame.

Pat - had an abortion (Tom Baxter was the father) then had twins with John Randolph.

Lani, Days: Baby David was stillborn, then she had Jules and Carver

Ciara on DAYS also felt like one, even though Zach was more of a child than an infant/toddler when he died. But the lore has always had that vibe.
