Not the show, but John Byrne is returning to do an alternate universe X-Men comic title that is being touted as possibly his final project: John Byrne Returns to X-Men, the Superheroes that Made Him F

Byrne made Elsewhen a while back on his website, I think. It's an odd one for sure but I am glad he got to do it.

I'd forgotten the legendary character actor John Colicos was the voice of Apocalypse in the original series, as well as of course playing Mikkos Cassadine on GH. Whoever they have doing it here is a pretty good ringer.

ETA: Apparently it's Ross Marquand, who also acted on The Walking Dead but has done a ton of voice work (including voicing the new Xavier in this show, and replacing Hugo Weaving onscreen as the Red Skull in Avengers Endgame). I'd never have known.

I'm sure this makes me a bad X-Men fan but... Apocalypse and his main narratives has never been one of the major X-Men arcs that has done much for me. I have so much good will for this show, even with the behind the scenes issues, that I'm still excited for season 2 but... meh. Some of that may go back to a bias as a teen in the 90s reading all my brother's old X-Men (etc...) collection and X-Force didn't do much for me at all.

I don't care for a lot of the 90s era of the books myself having lived through it, but the '97 cartoon has been pretty excellent (and is definitely soap opera). Hopefully they'll continue to maintain quality. Apocalypse I have more time for these days since Krakoa, which redefined him well. I also think they're taking their cues from the Rick Remender X-Force run in the early '10s for that team, which was a great book.
